  • Throat Punch Thursday ; Douche Bag Rommie Edition

I came across this story while trolling CNN, my favorite source of most of my Throat Punch Thursday posts because apparently CNN has a direct line to all douche baggery in the world. You’ve probably heard this story already. If not, be sure and watch the video and stay tuned. Commentary will follow!

    https://i.cdn.turner.com/cnn/.element/apps/cvp/3.0/swf/cnn_416x234_embed.swf?context=embed&videoId=us/2010/09/29/ricks.nj.clementi.suicide1.cnn

Apparently, there was a student at Rutgers University named Tyler Clementi who had the misfortune of rooming with an asshole named Dharun Ravi. Tyler Clementi,18, freshman at Rutgers University asked his roomate Dharun, also 18, if he could have the dorm room for a period of time in the evening of September 19. He wanted to be alone with a date, another boy on campus. Dharun Ravi left the room but promptly went to his friend Molly Wei’s room and proceeded to turn on his web cam and spy on record the boy on boy action. I’d say this Dharun Ravi character is some sort of perverted psychopath. But it didn’t stop there. No, this creep actually tweeted about it. “Roommate asked for the room till midnight. I went into molly’s room and turned on my webcam. I saw him making out with a dude. Yay.” OK, can you say sick bastard. First, invasion of privacy and secondly, have you nothing better to do then spy on you room mate and tweet about it, no less. Talk about social media at its best.

To make matters worse, a couple days later , on September 21st, he did the same thing. This time tweeting “Anyone with iChat, I dare you to video chat me between the hours of 9:30 and 12. Yes it’s happening again,” and with that he live streamed the sexual encounter between the boys. I’m convinced this Dharun Ravi character should be locked away in some prison cell, just for this.

The next day, Clementi was dead. He jumped off the  George Washington Bridge. How do we know this? For one his wallet and phone were found on the bridge, and then there is the omnious FB status update “jumping off the gw bridge sorry.”

Didn’t anybody think to go check on this kid? Ring him on the telephone? Go over to his dorm room? In the end, his body was found in the Hudson river. The cause of death was ruled to be suicide by drowning and blunt injuries from the impact of the jump from the bridge. Blunt injuries indeed!

Obvious choice for this weeks coveted Throat Punch Thursday goes to the fucking idiot Dharun Ravi for being the worst room mate in the history of the world. For being a creepy Lester pervert who not only spied on his room mate during an intimate encounter but then exploited it and made a mockery of him. Look, there is a lot of shit I would have killed my room mate in college for live streaming but nothing was ever as heinous as what this mental midget did. I don’t know if this Clementi kid was out to his family yet but I’m assuming not, since such drastic measures were taken to avoid the ramifications of the live stream. I hate that we live in a world where a nice kid can’t love who they want but a perfectly creepy asshole can literally get away with murder.

Ravi and his friend Molly Wei, 18, are each charged with two counts of invasion of privacy for the September 19 broadcast, according to the prosecutor’s office. * Really, is that the best they can do? Two more counts of invasion of privacy were leveled against Ravi for a September 21 attempt to videotape another encounter involving Clementi, according to the prosecutors office. I think this is laughable. These morons played a direct part in Clementi’s suicide. They are as guilty as if they had pushed him off the GW Bridge. I, personally, think they should be thrown off the GW Bridge themselves…especially the room mate. That is a sacred relationship. At the very least, they should be charged with Manslaughter and expelled from the university. There is much more information to support my stance please read the entire story here!

  • Throat Punch Thursday;Jackass Firefighter Edition

Tonight’s Throat Punch goes to a special kind of asshole. The kind of asshole who is suppose to be your knight in shining armor but turns out to be a freak with a cell phone that shoots video! News of graphic cell phone video footage taken at the scene of a deadly car accident on July 17, 2009 has gone viral. You heard me right, we are surrounded by sick, disgusting people who obviously can’t resist a car wreck. A bunch of rubberneckers of death. The video was taken by an unknown first responder( firefighter) and contains graphic images of 23-year-old Georgia woman (and mother) Dayna Kempson-Schacht .OK,close your mouth.I know my jaw was on the floor when I first heard about this. What’s next getting molested by priests? Oh wait, too late! Nothing is sacred anymore with all of this technology, not even your death.

    https://i.cdn.turner.com/cnn/.element/apps/cvp/3.0/swf/cnn_416x234_embed.swf?context=embed&videoId=us/2010/10/20/nr.daugher.death.online.cnn

The video was shared among firefighters and at a local bar before making its way online, where it went viral. Why? I don’t know why he took the video in the first place. Maybe if he had spent more time responding and less time filming the fatal crash it wouldn’t have proven fatal. Why was he sharing it at a local bar? It’s not like showing a picture of your kid in your wallet or a funny youtube video, he knew this video was not appropriate. Two-and-a-half months after Dayna’s death, the video was brought to the attention of her parents who say they cannot get the gruesome images out of their heads.
Surprisingly, investigators say they don’t believe any laws were broken in the filming and sharing of the video. Can you believe this type of behavior is tolerated in today’s society? Have we become so callus that it means nothing to spread a video of a woman’s death like a virus. Humanity has been plagued by apathy.

Tonight’s Throat Punch goes to the douche bag firefighter who betrayed his profession, sold out his humanity, and chose to video tape one of the most intimate moments of someone else’s life. I,personally, think he deserves to be taken off the job and prosecuted with criminal charges as well as civil charges brought by Ms. Kempson-Schacht’ parents for having to endure the accidental viewing of the horrific video. Mr. Firefighter, you are an embarrassment to your profession and your species.

  • Mommy Competition or More Bullshit that I’m sick of

This post is for my fellow Mommy bloggers. I know some of you don’t like to be pigeonholed by the term. I, myself, am pretty proud of it. I have only been writing this blog for about 2 years, but in that time I have surrounded myself with a wonderful community or women and men; mostly parents and bloggers.  I have met amazing women all over the globe. My friend and advice pool has increased exponentially. I have also learned that there is a definite pecking order in the community, as there is in any social circle. People with seniority are obviously going to know more about the field and have more experience and insight. This is nothing new. This is the way of the world.

Last night, I was checking my Twitter stream and I saw a confusing tweet about Top Tier (more seasoned) Mommy Bloggers and it linked to a post. I won’t link that post because I don’t like to give traffic to what I think is a malicious rant. I wasn’t sure if the tweet was in agreement of the post or against it. So, my interest was piqued and I had to read it for myself. The jist was that it was a complaint rant ( a whine, if you will) about how Top Tier Mommy bloggers are aloof and “take” all the opportunities and that the only reason they have the opportunities that they have is because they were here first. She went on to insinuate that the entire “community” that they inundate themselves with is nothing more than a handful of other Top Tier Mommy bloggers. The entire post felt to me like a platform to attack. Of course, it is her blog and she is entitled to say whatever she wants about whatever she wants. It’s her opinion but it really felt like sour grapes to me.

I am NOT a big name blogger, by any means. I fall somewhere in the middle of the spectrum of Mommy bloggers. But I can say this with complete authority, these women are where they are because they are talented writers, they work hard to network, they put themselves out there with their writing and most have been working hard at this for years.YEARS!The writer of the post says that the Top Tier Mommy bloggers “worm” their way into every single internet uproar referencing the Today Moms and Babble.com. These bloggers are the authority because they’ve been doing it the longest and gotten exposure for being pioneers in the field. The Today Show and Babble go to them first because the Top Tier Mommy bloggers are the ones who have been here for the longest. FYI, I know several “new” bloggers (especially int he NYC area) who have several media opportunities. So, it’s not just about being in that elite group. You have to be available and engage in social media. You can’t sit on a Mommy blogger throne and just think you are so special that the world must come to you. We are all moms. We grow babies and share our experience, have opinions..the end. Most are not independently wealthy, they are paid in prestige. They are paid in mattresses, trips and cameras. They write because they love to write. They write to maintain their sanity. They write because they have something to say. They keep writing because we are reading. I admire them for their fortitude and ambition. It’s hard to keep working so diligently on a goal that is almost impossible to reach.Mommy blogging is about as hard as actual Mommying, with much less rewards.

I wonder if the blogger who wrote the post has even ever tried to reach out to these so called Top Tier bloggers? I have. I have networked and chit chatted with just about every single one of them via Twitter, FB, our blogs, email and various other blogging platforms. You know what? The ones I’ve interacted with are very friendly, willing to guide/mentor a new blogger, gracious and smart. They don’t shut new bloggers out. But, as a new blogger, you have to be willing to engage, introduce yourself. They don’t know you. How could they? You’ve never met. It’s common sense, just like in your real life relationships. You have to make an effort. You can’t sit on your ass and expect Mohammad to come to the mountain. Most of us are not that fucking special. In fact, no one is that fucking special. Life is about relationships. You get out what you put in.

It’s ridiculous that I have to defend these ladies for doing nothing wrong. This post I read talks about community and the TOP TIER bloggers keeping it very elite and cliquey when she herself is the one who is attacking; shutting them out. They are not writing about keeping people out. She is. I think this is more a case of sour grapes than anything else. This is where the dysfunction comes from in this community. Not from Top Tier Mommy bloggers shutting people out but from whiny bloggers giving up and looking for someone else to blame for their own shortcomings. Work hard, persist and persevere or give up and shut up. Either way, stop complaining.

  • How to Celebrate Your Pet’s Birthday in Style

How to Celebrate Your Pet’s Birthday in Style

    Estimated reading time: 5 minutes

Has your pup’s birthday crept up on you, leaving you scrambling to pull together a last-minute celebration? Or perhaps you’re a pet parent who has always wanted to throw an over-the-top party for your fur baby ( you know just like the themed ones I threw for my girls throughout the years….who can forget Bella’s Moulin Rouge 5th birthday party ), but the idea of planning it all has made you want to curl up and take a nap instead of fetching the treats? Well, friends, your prayers have been answered, because PartyAnimal is here to make your dog’s special day an unforgettable extravaganza – with minimal effort on your part. This is how to celebrate your pet’s birthday in style.

Disclosure: I was provided a PartyAnimal party pack  and Tiger Toes for review purposes but all opinions are my own.

As the proud mom of the world’s cutest Dogue de Bordeaux, Stella, I know firsthand how quickly those birthdays and “gotcha days” can sneak up on you. Between work, family obligations, and keeping those four-legged kiddos entertained, finding the time to plan an epic celebration can feel like an impossible task. That is, until I discovered PartyAnimal. This brilliant brand has revolutionized the way we celebrate our furry friends’ big days, taking all the stress out of party planning so you can focus on showering your pup with all the love (and treats) they deserve.

PartyAnimal’s personalized PartyPacks are the ultimate hassle-free solution for busy pet parents. These ready-to-go kits arrive at your doorstep, packed with everything you need to transform your home into a one-of-a-kind dog birthday bash. From custom decorations featuring your pup’s adorable face to handcrafted accessories they’ll feel like a true VIP (Very Important Pup) wearing, PartyAnimal has thought of it all.

Now, I know what you’re thinking – a personalized party for your pup has to be crazy expensive, right? Wrong! PartyAnimal’s PartyPacks are incredibly affordable, with a one-time purchase price of just $98. And if you want to make this an annual tradition, you can sign up for their subscription service and receive a new, customized PartyPack delivered to your home every year for only $78. That’s 20% off the one-time price!

Ready to celebrate your pet’s birthday in style?

So, what exactly does a PartyPack include, you ask? Prepare to be blown away:

    • A personalized birthday banner starring your dog’s adorable face
    • A handmade birthday hat with your dog’s name and new age
    • A handcrafted bandana embroidered with their name and age
    • Custom birthday treat toppers featuring your pup
    • Two personalized party hats so the whole family can join the fun
    • A 50-piece balloon arch with a giant number balloon
    • A personalized pack of stickers with your dog’s face
    • A FREE electric balloon pump for easy installation

Seriously, how cute is all of that?! And the best part is, PartyAnimal has handled every single  detail, so all you have to do is throw on your party hat, bust out the pup-friendly cupcakes, and get ready to celebrate in style.

How to celebrate your pet's birthday in style, Tiger Toes, Party Animal Party pack

But PartyAnimal isn’t just about making your dog’s birthday extra special – they’re also on a mission to help other pups in need. The brand donates 10% of their net proceeds to dog rescue-focused charities, ensuring that every PartyPack purchase makes a positive impact on the lives of our four-legged friends. So not only are you giving your own pup the party of a lifetime, but you’re also supporting dogs across the country who are still searching for their forever homes. Talk about a win-win!

Now, I know what you’re thinking – with all these amazing features, a PartyPack must be too good to be true. But let me tell you, the team at PartyAnimal has thought of everything. Their products are made with high-quality materials that are built to last, and their customer service is truly top-notch; friendly and helpful. I felt like I was chatting with a fellow dog parent rather than a faceless brand.

And let’s not forget about the paws-itively perfect paw-cessories that’ll make your dog’s birthday celebration even more special. Take, for example, DOK’s TigerToes – innovative dog socks that provide comfort, stability, and mobility support for senior pets (or any pup who struggles with joint issues). These bad boys are specifically engineered to offer maximum traction on hardwood floors and other slippery surfaces, keeping your furry friend steady on their paws as they strut their stuff in their new birthday ‘fit.

The thick rubber soles also act as a barrier between your dog’s paws and the ground, protecting their precious pads from extreme temperatures and rough terrain. Whether you’re venturing out for a birthday walk on icy sidewalks in the winter or hot pavement in the summer, these versatile socks will keep your pup’s feet safe and comfortable. And let’s not forget about the relief they can provide for excessive paw licking caused by allergies – TigerToes are a game-changer!

So, what are you waiting for, pet parents? It’s time to start planning the ultimate birthday bash for your furry friend! Head to PartyAnimal’s website, choose your pup’s personalized PartyPack, add some TigerToes to the cart, and get ready to throw a celebration that will have tails wagging and mouths drooling (in the best way possible, of course). Your dog deserves to feel like the true VIP they are, and PartyAnimal is here to make that dream a reality.

Now, if you’ll excuse me, I’ve got some party planning to do – my pup’s big day is right around the corner, and I can’t wait to see the look on their face when they see their custom birthday bling. Wishing you and your four-legged bestie the happiest of birthdays!

Ready to make your dog’s birthday the talk of the town? Head to PartyAnimal.com and order your personalized PartyPack today! With hassle-free planning, personalized party supplies, and the chance to support rescue pups in need, this is one celebration your furry friend won’t soon forget.

What will you be doing this year to celebrate your pet’s birthday in style?

  • What Hosting Do You Need For Your WordPress Site?

What Hosting Do You Need For Your WordPress Site?

    Estimated reading time: 6 minutes

Hosting is a critical element of any website today, and with many different types of hosting packages, it can be difficult to know where to begin. After many years of hosting my blog, I’ve happily landed at WPEngine and love it for the performance and customer service. With that in mind, in this blog post, we’re going to take a look at managed hosting for WordPress. What is it? Is it a good option?

First thing’s first, what is managed WordPress Hosting? Managed WordPress Hosting is a service whereby your web host manages the technical aspects of running your WordPress site. To be clear, it’s not a service where your web host creates your WordPress site, they simply manage things like security, back-ups, updates, speed and consistent high performance.

WP Engine – Get 3 months free on WP Engine’s new eCommerce plans with coupon code ecommwpe10

Generally speaking, with most web hosts who offer managed WordPress hosting, you’ll receive exceptional premium support, where the support is provided by actual WordPress experts who know exactly what they’re doing. Managed WordPress hosting can be a little more expensive than your standard shared hosting, for example, GoDaddy’s basic plan starts at $2.99 per month (usually $5.99, with 50% off), but if you’re willing to pay the extra, then it’s certainly worth it. If you want to buy vps hosting, I would suggest opting for knownhost.com for results you have never imagined were possible in the first place.

As with most things, there are pros and cons of managed WordPress hosting, so we’ve put a list together for you to decide whether it’s right for you:

High Speeds: Because managed WordPress hosting servers are designed specifically for WordPress websites, you likely won’t be sharing your server with as many other customers as you would with shared hosting. You can check out this site and read more about servers that are best for small businesses. Higher speeds mean more traffic; if your website or blog loads within 3 seconds, which it will with WordPress hosting, then customers will stay longer on your website, and you’ll receive a higher SERP SEO with Google.

Quality Support: As we mentioned earlier, the support you’ll receive from a managed WordPress hosting plan will be top-notch. The WordPress experts at your beck and call really are experts, they know what they’re doing, so you can ditch the back and forth nonsense and be reassured that your problems and queries will get sorted straight away. As well as providing support, they can also advise you on which WordPress plugins would and wouldn’t suit your website, giving you tailor-made help whenever you need it.

Updates and Back-ups: Because the technicalities of WordPress are managed by your web host, you won’t have to worry about updating your website to the latest version of WordPress, or be concerned about daily back-ups. These features are all dealt with in-house by your web host, so you’ll receive automatic updates without any conflicts, and daily back-up runs in case anything goes wrong.

This enhances the convenience factor considerably, lessening your workload. However, you will still need to make sure you’re keeping on tops of the likes of SEO and PPC for your site. Your host won’t cover elements like this. You can view PPC data with separate tools to make sure you’re maximizing your advertising streams to full effect.

That all sounds pretty good, right? Well, it is, but there are a few downsides too, which may or may not affect you depending on why managed WordPress hosting is suitable for you:

Cost: Most managed WordPress hosting plans will set you back at least $10 per month, if you choose their unlimited options (which is advised for WordPress hosting, due to WordPress plugins, database back-ups, etc.). It may not sound like a lot, but when you compare it to shared hosting which is generally around the $2 mark, there’s quite a difference. However, if you consider how much it would cost you to pay for someone to manage your WordPress website, with the added security and speed features, it’s actually very reasonably priced.

Limited to WordPress: This may sound obvious, but it’s worth pointing out. If you choose managed WordPress hosting, the likelihood is that you’ll only be able to host a WordPress website. But, if you’re looking at WordPress hosting, then you’re probably not wanting to use another CMS, or create your own website outside of WordPress.

Limited Control: Because someone else will be managing your WordPress website, you won’t have as much control over the technical aspects, such as, security, speed, back-ups etc. Again, a moot point if the reason you’re choosing managed WordPress hosting is for someone else to run things because you can’t/don’t want to/don’t have to.

To be honest, if you’re using managed WordPress hosting for the right reasons, then there aren’t really that many cons we can think of that would put you off. If you’re a small-time blogger, or have a personal website, then this type of hosting probably isn’t for you. You can easily find a web host that offers shared hosting with 1-click installs for WordPress, with a much more affordable price tag. However, if you’re a growing business, or your website generates a lot of traffic, then managed WordPress hosting would certainly be beneficial.

If you’re looking for a stress-free option that isn’t time-consuming, or you don’t have the technical skills but are willing to pay someone else to deal with that side of things for you, choosing a managed WordPress hosting provider should be a consideration. It all comes down to weighing up whether the ‘managed’ side of things is worth paying for, dependent on the type of website you have, or the type of business you run. There are plenty of web hosting providers available that can offer managed WordPress hosting, such as, WP Engine, and SiteGround.

A lot of people do not think their choice of host matters, but it does make a big difference when it comes to cost and site performance, so take the time to assess all of your options carefully.

  • Theta Mom~My TRUTH

Today, I have the pleasure of having Heather Reinhard of ThetaMom as my guest on The TRUTH about Motherhood. Heather is a fabulous writer and all around wonderful lady. As I read her post, I realized just how much the two of us have in common. We have a common goal; to share the truth about Motherhood and to build a sisterhood of Motherhood. I have a great respect for Heather and I think that you will really enjoy her piece. If you are not a follower of Heather, I hope that you will do yourself and favor and check out this classy Mommy. If you are here from ThetaMom.com, Welcome and I am glad to have you here as I celebrate my 2nd year blog anniversary. Thank you Heather for sharing your Truth. XO

    My Truth

I always knew I would be a mother someday. I think many of us have those dreams similar to those of walking down the aisle and buying the perfect little house with the white picket fence. Well, purchasing that first home and even getting married are huge milestones, but my life completely changed when I entered the world of motherhood.

    What’s my truth?

Pretty much the very reason I began my blog – I wanted to connect with other women and mothers who I know were experiencing the same kind of things as I was experiencing. I developed a Mission which essentially became the purpose of my blog.

I remember thinking, “Why didn’t anyone divulge the real deal to me about actually giving birth? Why didn’t anyone tell me the whole truth about what to really expect? Why didn’t they force me to take some time for myself and enjoy every second of being selfish before I gave birth?

Why didn’t they tell me to travel more? Why didn’t they tell me that this would be the most difficult job and also the most rewarding at the same time?

Why didn’t they describe the heartache I would feel when my child was sick? Why didn’t they sit me down and really tell me the long and challenging road I would have ahead of me before bringing this beautiful human being into the world?

Why didn’t they emphasize the fact that life as I once knew it would never be the same on so many levels?

    Bottom line?

I felt like I was misinformed. I felt like there was a secret code shared among mothers that wasn’t written or spoken about. And I feel the same way about motherhood.

Why didn’t anyone tell me the real deal about motherhood? Although I love my children more than anything in the world, the reality of this role was never clearly defined for me. It is by far the hardest job on the planet. So, I decided to break the secret code or at least maybe the silence. Hence, Theta Mom was born.

Theta Mom is my truth and my salvation; a place that encourages all mothers to feel united as we travel this road together. We are not perfect. We admit when we fail and we are proud of how we gracefully pick up the pieces, learn from our mistakes and move on as better mothers for it.

Motherhood is not easy – but at least we are in this thing together.

  • Nothing Says Holidays like Matching Pajamas & Visa Checkout

Nothing Says Holidays like Matching Pajamas & Visa Checkout

This is a sponsored post. I received compensation from Visa/Gymboree to buy my products and

use its Visa Checkout online payment service, but all thoughts reflected here are my own.

We had our first snow this week, Tchaikovsky’s been playing on a continuous loop and the first

fire of the season has been stoked in our fireplace. Tis the season of twinkling lights, cozy

pajamas and cuddling with those you love the most. It’s also a reminder that the holidays are

    right around the corner.

This year it seems like everyone has decided to skip Thanksgiving and go directly to Christmas.

At first, I wasn’t really onboard with early Christmasing but suddenly I am all about Christmas.

I’m ready to put up the tree and deck the halls and falalalalala all over the place. Bring on the

    shopping.

I’m planning ahead for breakfast with Santa and family Christmas card photos. Usually at this

point my head is consumed with thoughts of sugarplums dancing in my head and all things

Nutcracker. That’s what happens when you’re the mom of ballerinas. Your entire holiday season

is broken down into two categories; Nutcracker season and the hurried rush of the two weeks

    until Christmas.

When most people are carefully planning their holidays, I am busy hurrying from one

performance to the next. I’m sure all the ballet moms reading this are shaking their heads in

agreement. Don’t get me wrong, it’s totally worth it and I love every minute of being a part of

this part of my daughters’ lives but it doesn’t leave a lot of leisurely time for things like baking

cookies, ice-skating and taking fun, family photos in matching Christmas PJs. I decided this year

things are changing, we’re doing the Christmas cards like everyone else (and not the week of

Christmas like I’ve been doing for the past 5 years.)

In fact, I got on the Internet a couple weeks ago and visited Gymboree and found the cutest

holiday pajamas for the entire family, yes, even my 6’5” husband. Not just coordinating pajamas

but real, honest to goodness, matching pajamas in all of our sizes; from newborn to Men’s 2XL. I

thought it was too easy. I love everything that makes my life easier. Streamlining is my happy

    place.

When I went to checkout, I was pretty excited to see the Visa Checkout button. What’s Visa

Checkout? It’s a simple, easy ways to pay with any major credit or debit card online at the sites

you love. Simply create an account once and speed through all of your future purchases without

having to search for the wallet, get it out and re-enter payment and shipping information every

single time. I don’t know about you, but this is a super time saver during the busiest shopping

    season of the year.

After the initial account is set up with your major credit or debit card, all that is required is your

username and password. It’s secure with Visa’s advanced security tools that leave customers

with zero liability in case of fraud and it allows shoppers to earn great rewards. Offering a

consistent, simple experience across desktop, mobile web and apps. Voila, who said the holidays

    had to be hard?

Visa Checkout is already an option at many big retailers, and thanks to Visa’s vast network it’s

growing all the time and I know, for a fact, that it’s available at Gymboree.com. What are you

waiting for? Go make your life easier and spend that time actually enjoying your holidays.

  • Easy Recipe for Chicken Tacos with Avocado Cream Sauce

Easy Recipe for Chicken Tacos with Avocado Cream Sauce

This recipe for chicken tacos with avocado cream sauce is part of a sponsored campaign with DiMe Media and Hass Avocado Board. However, all opinions expressed are my own.

Did you know that in the United States, Latinos are twice as likely as non-Latino people to develop type 2 diabetes? That’s a scary statistic that I’ve been acutely aware of for a very long time. I lost someone very important to me, my favorite Great Uncle, to type 2 diabetes when I was 15-years-old and it was horrible. The worst part is that it could have been prevented with a few simple changes in his diet and a little education about eating healthy.

Cardiometabolic abnormalities, a cluster of risk factors for both cardiovascular disease and type 2 diabetes such as abdominal obesity, high blood pressure, high cholesterol and triglycerides and high blood glucose levels are higher in the Latino population overall than among non-Hispanic whites.

We can help prevent ourselves from developing type 2 diabetes. One of the most important and effective things we can do to lower our risk for type 2 diabetes is to eat well to maintain a healthy weight. This can be done in many ways and one of the easier ways is to take some of our favorite Latino recipes and reconfigure them to be healthier.

One of our favorite recipes in my house is beef tacos. We love tacos. We can eat them every day of the week. Literally. We could eat anything in a tortilla but tortillas are not the best things for us to eat, especially since our favorite is flour tortillas filled with sour cream, cheese and ground beef. But with a few simple tweaks we can make tacos less hazardous to our health.

Here is my recipe for Chicken Tacos with Avocado Cream Sauce:

    Ingredients

Tortillas (or you can go the healthier route and eat as a bowl on a bed of lettuce)

    Olive Oil

    Taco Meat

    3 Chicken Breasts

    1 Garlic Clove, diced

    3 lemons juiced

    1 onion, diced

    Salt/ Pepper to taste

     Directions:

    1. Boil the 3 chicken breasts for 45 minutes to an hour.
    2. Shred chicken.
    3. Heat a frying pan on medium heat until water sizzles when splashed on pan.
    4. Heat 3 tablespoons of olive oil.
    5. Add onion and garlic to hot oil, sauté until golden brown.
    6. Add shredded chicken, stirring thoroughly until slightly golden.
    7. Add lemon from three lemons.
    8. Salt and pepper to taste.
    9. When thoroughly heated, turn heat down and start working on Avocado cream sauce.

    Ingredients

    2 Hass avocados
    1 lemon, juiced
1 large clove garlic, pasted or grated
A small handful fresh cilantro leaves, optional
About 1/3 cup light sour cream

    Directions
Place the Hass avocados in a food processor. Add the lemon juice, garlic, cilantro, if desired, and sour cream and process until very smooth and mayo-like in consistency.

Avocados are virtually the only fruit that contains monounsaturated fat, and they are sodium, cholesterol and trans-fat free. How can something that tastes so good be so good for you?

    Toppings

    Salsa

    Shredded Quesadilla Cheese

    Refried beans with Sazon seasoning

    Tomato, diced

    Shredded Lettuce

Next, heat your tortillas up on a comal (ten seconds, flip, five seconds, flip, five more seconds and then remove) or in the microwave, 35 seconds for a pack of ten. I’ll be honest they taste better heated up on the comal (griddle) and if you want to go healthier eat on a bed of lettuce.

Then spread your warm refried beans with Sazon seasoning (about 1 tablespoon), next add your quesadilla cheese (about ½ a teaspoon), top with sautéed chicken breasts.

Top your chicken tacos with avocado cream sauce, salsa and diced tomatoes. For extra crunch, shredded lettuce will do the job.

If you really want an authentic meal, make elote casserole or Mexican rice (recipe coming soon) to accompany the meal.

  • Epic Road Trip Adventure from Kamloops to Calgary

Epic Road Trip Adventure from Kamloops to Calgary

I am writing this on the plane as I head out for my epic road trip adventure with Ford to explore Kamloops to Calgary Canada. I am bound for an adventure through some of the most beautiful terrains in Canada. For the next four days, I will be driving the new 2016 Ford Explorer on one of six legs of Ford Explorer Platinum Adventure Tour.

What better way to introduce the 2016 Ford Explorer Platinum – a vehicle that combines the best of Limited and Sport editions – than with a road trip trek through western North America to end all road trips. At revologycars.com you can find 1968 Mustang Fastback for sale and many other classic Mustang ready to be purchased.

Ford has created a one-of-a-kind adventure for an all-in-one SUV that is ready to #ExploreMore. Over the past 25 years, Ford Explorer has reigned as the best-selling SUV in the United States, with more than 7 million sold. Yet even with those numbers, there are countless adventures still to be had. That’s where I come in!

    Road trip time to #ExploreMore

I have the honor and pleasure of joining the Ford Explorer team as they carve a path from Vancouver to Albuquerque, with a fleet of 2016 Explorer Platinum models. There are six distinct adventures planned that cover more than 2,000 miles along some of the greatest roads in North America.

My leg of this epic road trip journey is the Calgary Stampede. I chose this leg of the adventure because I am into pushing the limits in my travels and a huge fan of some of the most remote landscapes on the planet. When I travel some place, especially when by car, I want to be surrounded by beautiful majestic scenery and when I saw the itinerary for this adventure, I knew this was the road trip for me.

Today, I am journeying to Kamloops, British Columbia to join my fellow Ford explorers on this adventure. Tomorrow morning, my chance to really explore more begins as I depart Kamloops, cross the Canadian Rockies and eventually find my way back to Calgary.

Tomorrow, I will overnight in Revelstoke, near majestic Glacier National Park, home to more than 400 glaciers where 12 percent of the landscape is covered by perpetual ice and snow.

Over the next 4 days, there will be cerulean Lake Louise and lovely Moraine Lake which boasts views for which there are no words, but I will certainly try to find the words to share this once in a lifetime road trip.

Who knows, maybe I’ll take a gondola ride in Banff or a scenic drive around Lake Minnewanka. One thing is for certain; I will be sharing this epic adventure and all the information on how the new 2016 Ford Explorer handles. Follow along on my social media channels; Instagram, Twitter, Facebook and Periscope. Just keep your eyes on the #ExploreMore hashtag.

I brought the good camera, so expect some stunning photos of some of the most beautiful, majestic landscapes in the world.

If you had the chance to explore anywhere in the world, what would be your ultimate road trip?
