    The holidays feel as if they came a little quicker this year. It definitely snuck up on me. It’s been a crazy year and with spending this autumn out of commission, it feels like I’ve missed an entire season of my life. In many ways, I guess I have. I hate missing these moments, especially the ones that involve my daughters.

    For me, Christmas cards are very important because it is the one time of the year that I know I will reach out to family and friends and they will do the same. I have friends and family that I never get to see in person because of the distance between us but without fail we exchange those cards with photos of our families. Without fail, we think of one another at least for a little while once a year. It is such a small thing but it means the world to me and I look forward to seeing those photos of our friends and their families far and wide each year. It makes us feel so much closer in this great big world.

    Life is a celebration, and every moment spent with family and friends is a moment worth capturing.     By the time I have actual “free time” (you know the 20 minutes after they fall asleep and before they wake back up trying to get into my bed) I’m simply too exhausted to remember that I’m supposed to be designing, ordering, addressing and mailing Christmas cards. But this year, I tried something different.

    I’ve been stuck on the couch due to my broken leg but my days are packed with deadlines. I knew I wanted to order my cards and have them ready to mail out the day after Thanksgiving so I gave myself 30 minutes one day, jumped on Shutterfly used the uninterrupted time to design our Christmas cards.

    When I was growing up, I didn’t know my grandparents very well. I knew who they were, I loved them because that’s what you’re supposed to do but I only saw them once a year and on special occasions. Mostly, I knew about them through stories, cards and photos. I always knew that I wanted more than that for my children. I wanted real connections, bonds.

    Back then my parents lived in Mexico and the other set lived in Tennessee. We lived in Chicago. There were six kids so to go anywhere, we had to drive and anyone who has ever road tripped with six children know that it’s not something you want to do every other month. It’s a big, chaotic, crazy deal so we’d go spend time with our grandparents once a year. In fact, I never met my grandfather in Mexico until I was 10 and he was already in his late 80’s. I loved these four elderly people but really, they were nearly strangers to me. Strangers who I knew I was supposed to love and respect.

    Today, more than 7 million grandparents live in the same house with their grandchildren. The sandwich generation is a real thing and I think in many ways it is amazing. In the Latino culture, having grandparents live in the same house as their grandchildren has always been a very common thing. It fosters a great sense of bonding and makes it possible to really get to know one another, which I think is so important.

    Before we had children, the Big Guy and I traveled and moved around a lot. But the minute I gave birth, I knew we had to move back to the Midwest because having my parents and my husband’s parents be an involved part of my children’s lives was very important. It was non- negotiable so we relocated back to the Midwest and have never regretted the decision.

    There is a bond that forms when a child spends real day-to-day time with their grandparents that can’t happen when they only see them on special occasions. Life happens in the minutia. Not only does the help the children grow up close to their grandparents, it’s good for the grandparents. Playing with the little people you love, keeps you young and happy. The same way, having a grandparent to turn to for advice and a little extra attention is good for the soul of a child.

    When you stop moving, you stop living. I’ve learned this first hand with my recent leg injury. These days less than half of grandparents are fully retired and almost 40% still work. They want to keep moving and living fully for as long as possible and feeling needed and appreciated by family members, especially adoring grandchildren is the perfect recipe for that.

    The more family members talk to one another, the more you learn about one another. We know things about my parents and my husband’s parents than ever before because in our regular daily conversations, things come up that would not otherwise. We know all of our parents’ health issues, meds they take and what their plans and wishes are in case anything tragic ever happens. I never knew these things before but by being more involved in one another’s lives, these things come up in normal conversation and this is good because we won’t be left scrambling in the case of an emergency. There is a casual comfort that comes with being with loved ones every day.

    All of this also does one more very important thing; it opens up conversations about genetic health issues or just health in general. My girls know that my dad has always led a predominantly healthy and active lifestyle and it shows. They also know that being Latinos, we have family members who have died from diabetes and high cholesterol and that they need to be aware of that. They know that 3 of their 4 grandparents have heart issues but they also know that with a healthy, active lifestyle they can help prevent that.

    Moving so that our children could be closer to their grandparents, figuratively and literally, was one of the best decisions we ever made for our daughters, our parents and ourselves. In my opinion, family is the most important thing we can give our children.

    Do You Vaccinate?

    Do you vaccinate your children? I do. Every time they are due for their vaccinations, I schedule an appointment with the pediatrician and we get our shots. According to the CDC, vaccines prevent more than 700,000 child deaths in the US.

    While there are some childhood illnesses that are seldom found in the western world these days, because of vaccinations, there are others that are still very rampant in the world and they do not discriminate by race, color, religion or socioeconomic standing. These illnesses will attack where they can and either you are protected, or you are not.

    I vaccinate my children because I want to protect them against childhood diseases that can wreak havoc on their immune systems and even be fatal. I realize that some children cannot be vaccinated due to health issues, and that’s why it is even more important that those who can do, to help protect these children as well.

    What scares me is the fact that the entire concept of vaccines relies upon herd immunity, which is the idea that diseases won’t be communicable because most people are immune. If there are enough unvaccinated children roaming the world, the situation can allow for the spread of diseases that we thought were nearly eradicated, like measles, mumps and whooping cough.

    The near and complete eradication of these childhood diseases due to vaccines keeps our children safe. Vaccines are a great thing. Now, cases of pertussis, measles and mumps are popping up all over the country. Don’t think it’s going to stop there. The less we vaccinate, the worse this is going to get. No matter the reason behind not vaccinating, being unvaccinated means being vulnerable and susceptible to these diseases.

    My point is this: We live in a world where these diseases have become a thing of the past. We don’t plan for them, we don’t worry about them and we don’t know how to readily recognize them.     Did you know that 6 million(23%) Hispanics in the United States have diabetes compared to 20 million of non-Hispanic whites. In addition to that an estimated that 57 million people in the United States have pre-diabetes, and 35% are estimated to be Hispanic. This is a terrifying statistic, especially for the Latino community.

     

    At my last check up my doctor told me that my sugar was higher than she would like. I was not diabetic but she wanted my numbers to go down or one day, I will be diabetic. That really scared me because I have lost people in my family that I love to diabetes. I don’t want to be another statistic and I certainly don’t want to die because of bad eating habits.

     

    That’s the thing about diabetes, it is a scary and terrible disease but it can be prevented if you are willing to do the work; move more and eat less of the foods that are bad for you. I know it’s hard because we develop these habits and our bodies crave sweets.

     

    It’s not easy but isn’t your life worth the sacrifice? Isn’t being around to see your children and your grandchildren grow up worth it? Do it for your spouse who loves you and doesn’t want to live without you. Do it for you because you deserve to live a long and happy life and no amount of sweets is worth giving up all of that living you still have to do.

     

    One way to avoid becoming another statistic is to start by changing some of your favorite recipes and making them healthier. You could be surprised at how a few tweaks can change your life for the better.

     

    One of my favorite treats has always been ice cream. I love ice cream but I know too much of a good thing can quickly become a bad thing so I’ve changed up one of my favorite recipes the banana split.

     

    Banana Split Parfait

     

    Ingredients

    Glucerna, diabetes, carbsteady, healthy snacks, diabetic dessert, dessert

    ½ banana

    ½ cup of strawberries

    ¾ cup of organic French vanilla yogurt

    Over the next 4 days, there will be cerulean Lake Louise and lovely Moraine Lake which boasts views for which there are no words, but I will certainly try to find the words to share this once in a lifetime road trip.

    Who knows, maybe I’ll take a gondola ride in Banff or a scenic drive around Lake Minnewanka. One thing is for certain; I will be sharing this epic adventure and all the information on how the new 2016 Ford Explorer handles.     Did you know that in the United States, Latinos are twice as likely as non-Latino people to develop type 2 diabetes? That’s a scary statistic that I’ve been acutely aware of for a very long time. I lost someone very important to me, my favorite Great Uncle, to type 2 diabetes when I was 15-years-old and it was horrible. The worst part is that it could have been prevented with a few simple changes in his diet and a little education about eating healthy.

    Cardiometabolic abnormalities, a cluster of risk factors for both cardiovascular disease and type 2 diabetes such as abdominal obesity, high blood pressure, high cholesterol and triglycerides and high blood glucose levels are higher in the Latino population overall than among non-Hispanic whites.

    We can help prevent ourselves from developing type 2 diabetes. One of the most important and effective things we can do to lower our risk for type 2 diabetes is to eat well to maintain a healthy weight. This can be done in many ways and one of the easier ways is to take some of our favorite Latino recipes and reconfigure them to be healthier.

    One of our favorite recipes in my house is beef tacos. We love tacos. We can eat them every day of the week. Literally. We could eat anything in a tortilla but tortillas are not the best things for us to eat, especially since our favorite is flour tortillas filled with sour cream, cheese and ground beef. But with a few simple tweaks we can make tacos less hazardous to our health.

    Here is my recipe for Chicken Tacos with Avocado Cream Sauce:

    Ingredients

    Tortillas (or you can go the healthier route and eat as a bowl on a bed of lettuce)

    Olive Oil

    Taco Meat

    3 Chicken Breasts

    1 Garlic Clove, diced

    3 lemons juiced

    1 onion, diced

    Salt/ Pepper to taste

     Directions:

     

    1. Boil the 3 chicken breasts for 45 minutes to an hour.
    2. Shred chicken.
    3. Heat a frying pan on medium heat until water sizzles when splashed on pan.
    4. Heat 3 tablespoons of olive oil.
    5. Add onion and garlic to hot oil, sauté until golden brown.
    6. Add shredded chicken, stirring thoroughly until slightly golden.
    7. Add lemon from three lemons.
    8. Salt and pepper to taste.
    9. When thoroughly heated, turn heat down and start working on Avocado cream sauce.

    Avocado Cream Sauce

    Ingredients

    2 Hass avocados
    1 lemon, juiced
    1 large clove garlic, pasted or grated
    A small handful fresh cilantro leaves, optional
    About 1/3 cup light sour cream

    Directions
    Place the Hass avocados in a food processor. Add the lemon juice, garlic, cilantro, if desired, and sour cream and process until very smooth and mayo-like in consistency.

    Avocados are virtually the only fruit that contains monounsaturated fat, and they are sodium, cholesterol and trans-fat free. How can something that tastes so good be so good for you?

    Next, heat your tortillas up on a comal (ten seconds, flip, five seconds, flip, five more seconds and then remove) or in the microwave, 35 seconds for a pack of ten. I’ll be honest they taste better heated up on the comal (griddle) and if you want to go healthier eat on a bed of lettuce.

    Then spread your warm refried beans with Sazon seasoning (about 1 tablespoon), next add your quesadilla cheese (about ½ a teaspoon), top with sautéed chicken breasts.

    Top your chicken tacos with avocado cream sauce, salsa and diced tomatoes. For extra crunch, shredded lettuce will do the job.

    If you really want an authentic meal, make elote casserole or Mexican rice (recipe coming soon) to accompany the meal.

    There is a new bed in town, the Sleep Number Sleep IQ Kids Bed and it’s not only intuitive, it keeps your kids in bed so they can get the rest all growing children need, allowing you to get the sleep you need.     This revolutionary new kid’s bed monitors sleep cycles and can help parents decipher if diet, stress or other activities throughout the day are impacting the quality of their day. I experienced the Sleep iQ Kids bed for the first time at CES in January and it was amazing.

    A monster detector deciphers when under the bed is clear of even the scariest of boogie men. By hovering a smartphone or tablet in the direction of the bottom of the bed, a small monster icon will appear and determine if the coast is clear. This would have been amazing when Ella was having nightmares about chickens and lemurs under the bed!

    The bed, equipped with tiny hidden sensors, uses digital-signal capture within the mattress and processing techniques to pick up on motion and pressure. It tracks a child’s breathing and heart rate throughout the night too, and blends that data with other factors to determine a SleepIQ score in the morning; the higher the number (based from 1 to 100), the better the quality of sleep.

    It’s also interactive. A sleep dashboard (available via an Android app or desktop) shows parents how well each child slept and alerts them in real-time if they need attention and are out of bed. The bed can also tilt if a child wants to read or has a stuffy nose from a head cold or allergies. Meanwhile, soft lights around the bed glow when kids get up or want to read and parents can turn them off remotely when it gets too late or little people nod off to slumber.

    The bed is designed to grow with a child. Once they hit 10-years-old, they can manage their own SleepIQ score and see for themselves how exercise, sugar and TV time impact how they feel in the morning. This is intended to teach kids how to make better choices throughout the day and absolutely for newly crowned tween who thinks she knows everything.
